PESTO from ANY GREEN that is not packed in PLASTIC

How annoying is it that Basil is ALWAYS packaged in a little plastic bag. Instead of sacrificing the planet for your pesto, grab ANY green. Literally you can grab anything. You can make pesto with arugula, kale, mint, even the tops of carrots!! I know. Sounds crazy, but tastes delicious!

If you have a bulk foods store that sells nutritional yeast, I recommend adding that in to your pesto to keep your pesto vegan and still have a bit of cheese flavour. The cashews help it taste creamy, but you could really use any nut! I prefer pine nuts or cashews, but get experimental! 

That is the KEY to plastic free cooking (and living!), getting experimental and not being afraid to get creative to avoid plastics and try something new. Try this recipe as a foundation for experimenting with different greens, nuts or seeds, oils and spices. 

Pesto Ingredients

PESTO Ingredients

  • 2 Cup Kale (or any green)
  • 5 Garlic Cloves
  • 2 Tbsp Olive Oil
  • 1 tbsp Nutritional Yeast
  • 1/2 tsp Sea salt
  • 1 cup Cashews, soaked overnight
  • 1 small Lemon, juiced

INSTRUCTIONS

Using a blender or food processor, blend all ingredients! Sample and decide if you need to add more pepper! or sea salt! or cashews! or lemon! 

Enjoy this pesto on pasta, top on veggies and roast, or as a dip to bring to picnics or potlucks with crackers or sourdough bread.
