Vegan Gluten-Free Oatmeal Chocolate Chip Pecan

I was happy to have all the ingredients I needed to whip up these healthy-ish vegan gluten free oat choc chip pecan cookies 🤤🤤🤤:

DRY 

3 cups gf flour (I used half buckwheat, half spelt)

2 tbsp flax seeds

2 tsp salt

2 tsp baking soda

1.5 cup coconut sugar



WET

1 cup vegan butter

1 cup coconut oil

4 tbsp plant milk

3 tsp vanilla



ADD INS

2 cups gf oats

2 cups quinoa flakes

3 cups vegan dark choc chips

1 cup pecans



  1. Set oven to 180C/350F

  2. Grease a pan lightly with coconut oil (don’t use non-stick or teflon pans, this material is toxic)

  3. Mix the dry ingredients into a big bowl

  4. Mix the wet in a smaller bowl

  5. Pour wet into dry, stir

  6. Stir in oats & quinoa flakes

  7. Stir in choc chips & pecans

  8. Spoon out little balls of dough & gently press them into a cookie shape (they will not rise, this will be their shape)

  9. Bake for 9-11 min

  10. Let cool & enjoy with people you love!


This is a double batch, makes around 25-30 cookies
