Gooey Caramel Walnut Brownies
These are divine. The vegan caramel swirl through these decadent brownies make these treats look as gooey as they are. The secret ingredients that don’t make the title, are pureed pumpkin and ripe banana! So, basically just fruits & veg! hehe. Enjoy warm served with vegan ice cream or cool. All dry ingredients should be bought BULK, no plastic necessary. Bring your own jar to avoid
INGREDIENTS:
(go all organic if possible!)
Coconut oil for greasing pan
1.5 cup baked pumpkin
2 bananas
⅓ cups raw local honey
¼ cup coconut oil
1 tsp vanilla essence
¼ cup buckwheat flour
¼ cup coconut flour
⅓ cup cacao powder
¼ tsp bicarb soda
¼ tsp sea salt
1 tsp cinnamon
½ tsp cardamom powder
1 cup walnuts, rough chopped
2 tbsp tahini
2 tbsp honey
10 walnuts
METHOD:
Preheat oven to 180C and grease a square brownie tin (approximately 18 x 18).
Puree / blend the sweet potato and banana and pour into a bowl.
Add honey, coconut oil, vanilla, flours, cacao, bicarb, and spices. Stir or whisk until smooth.
Stir in nuts and pour into the prepared tin.
On the stove on low heat, heat the honey and tahini stirring until similar to caramel texture.
Swirl this through the brownie batter, pressing the vegan caramel into the chocolate batter. The more exposed on top, the more it will bubble and could burn. A little is okay, but tuck most into the batter for delicious gooey caramel bites!
Sprinkle ten walnuts on top.
Bake for 40-50 minutes, checking to ensure the top doesn’t burn. Test with a toothpick, if it comes out a little moist, that’s perfect! If you like a cakier brownie, bake for another 5-10 minutes.
Let cool, cut, and serve with vegan n’ice cream.

1/2 can refridgerated coco cream
2 pitted dates
